Tomorrow is our Daytona 500 party. I had planned for 2 weeks to take Homemade Chex Mix, and a Cream Cheese Dip and crackers. Then, this past week, Kelli had this recipe posted for Red Velvet Cupcakes with Cream Cheese Frosting. Now, Red Velvet Cake has been a staple in our family for years. We've always had it as a 2-layer cake with a cooked frosting. Kelli's cupcakes looked so delicious that I decided to add them to our party foods. (I confess, I had a sample and they taste as good as they look!)

Well; I started my 30 day thing today!! I love cream cheese icing--I can eat it since it is gluten free; unfortunately I can't have the red velvet--boooo hooo
